The production of the Aszú wine (teardrop wine) is a meticulous process, which requires great patience and extensive know-how. It is only possible in exceptional vintages, when nature brings rain at the end of the summer and sunny but windy start of autumn, which are essential for the noble berries for form. The berries are swollen due to the humidity and the "Botrytis cinérea" establishes in its skin and creates the noble rot.
The same formulas are used to make the wines as have been used for hundreds of years.
To the must in a Gönc barrel, that is 136-litres, 3, 5 or 6 23-kg panniers ("puttony" in Hungarian) of Aszú noble berries. The Aszú noble berries are macerated with the must and we then wait for one day or two for the berries to swell and they are then pressed.
The fermentation of the Aszú must is a slow process that can sometimes last up to two months. It is then put into wood barrels and is left in a protected wine press, waiting for the fermentation to stop by itself. We then add a little Eszencia, which has been collected drop by drop from the Aszú berries. We thus symbolically return its soul, which is embodied in the Eszencia.
The Aszú wines are aged in 136-litre (called "Gönc") and 220-litre ("Szerednye") small barrels. Oak from the mountains that border the winemaking region is used to manufacture the barrels. The Aszú ageing takes place in underground wineries dug out in the volcanic soil. The wine is left to age here for 2 to 3 years, at a constant temperature and degree of humidity. After being bottled, the Oremus Aszú is left to continue ageing in the bottle for a year, which is the opportunity for it to embark on a journey of development that can even last several decades.

Its ageing process is completed in 136 and 200-litre barrels for two to three years and bottled for an additional 4 to 5 years.Aszú 6 Puttonyos is a luxurious wine where its fine acidity supports its extraordinary mellowness.
This wine from the 2014 vintage is very complex on the nose with notes of forest fruits honey. In the mouth, the sharp acidity balances the luxurious sweetness.

Winter was unusually mild with an extremely dry December and abundant rainfall in February. Spring was warmer and wetter than normal. Budbreak began in early April, two weeks earlier than usual.
The summer was rainy, with no extreme heat. Vineyard ripening followed the usual rhythm.
A mild and rainy autumn helped the early development of botrytis resulting in a selective and elaborate harvest.
Yields were low and the vintage favors classic Aszú wines, crisp and fruity, with refreshing acidity.Storage, serving and drinking window
This wine is suitable for drinking now, but it can be stored for 40 years in optimal conditions: 12-14 °C / 54-57º F and 60 % relative humidity.

Winter of 2013 was mild with abundant precipitation, which provided an ideal water reserve to start the growing cycle. Rainfall continued in June, though July and August were dry and hot with some showers and hail. Autumn was mild though its cold nights and sunny days reinforced the typical acidity of the region. Classical vintage to produce excellent Aszú grapes.

Winter and spring were mild causing early flowering, while summer was hot and dry. Fall brought rainy days and cooler temperatures, which made way for Botrytis to act on overriped berries.
Yield is average with extraordinary quality.
Elegant and intensive fruitiness, along with silky texture characterizes 2007 Aszú wines.

This wine is ready to drink now holding a potential ageing window of approximately 40 years if kept in ideal conditions: constant temperatura of 12-14 ºC and 60% relative humidity.

After a very cold winter with temperatures of up to -17 degrees, spring started late causing a ten day delay in flowering. Summer was cool , some showers in August and the good weather in September resulting in very good acidity and perfect ripeness level of the grapes in harvest time.

Today it is the one which receives greatest universal acclaim.
The Tokaj region, Tokaj-Hegyalja lies within the range of mountains in north-east Hungary. The village of Tolcsva and the Oremus winery are located at the geographical heart of said region.
Production of Aszú wine (teardrop wine) is a meticulous process only possible in good vintages facilitating development of "Botrytis Cinerea" (noble rot).
For hundreds of years it has been made in the same way, adding to the must which fits in a "Gönc" barrel (136 litres) 6 panniers of 25kg (in Hungarian: "puttony") of noble Aszú berries. We macerate the noble Aszú berries with the must then wait a day or two for the berries to swell, before pressing them. Fermentation is a slow process which can take up to two months. Then, drop by drop, we add a little of the Eszencia, we collected from the Aszú berries.
By doing so, we symbolically return its soul to it, embodied by the Eszencia. Aszú wines are aged in small wooden of 136 litre barrels (known as "Gönc" barrels) and 220-litre ("Szerednye") barrels for 2 to 3 years.
Aszú 6 Puttonyos is an intense, passionate, vehement wine, with aromas exuding experience. It is the wine of the king and the king of wines.

Following an unusually cold and snowy winter, budding occurred at the normal time. Summer temperatures were quite mild and there was heavy rainfall. There was a long, dry autumn, which helped the grapes to ripen perfectly. The Botrytis was established at the end of October thanks to abundant mist. It was a very good year.
